Diran Basmadjian, The Art of Modeling in Science and Engineering, Chapman & Hall / CRC, 1999.This is the big book of modeling. This might be too big and expensive for a textbook for a class, but might be useful as a supplemental reference. The sheer size of the book is impressive.

MacCluer, Charles R. Industrial Mathematics (Modeling in Industry, Science, and Government, Prentice Hall, 2000. This text is for upper level students (Junior or above) and has a wide variety of topics. The last chapter is on report writing, which would be helpful for a project driven course.

Thomas Svobodny, Mathematical Modeling for Industry and Engineering, Prentice Hall, 1998. This is an upper level text for at least sophomores, but more likely juniors and higher. There is a fairly large list of topics including stochastic models, ODE, and even PDE models.
